Recipe Ingredients for Mexican Rice with Cheddar

1 tbsp butter
2 garlic cloves
1 large onion, chopped
1 green pepper, diced
1 lb lean ground beef
1/2 tsp ground cumin
1 tsp chili powder
19 oz red kidney beans
1 cup long grain rice
1 1/2 cups corn
1 1/2 cups salsa
1/2 cup water
2 cups cheddar, grated or diced

Recipe Directions for Mexican Rice with Cheddar

  1. In a large saucepan, saute garlic, onion, green pepper and beef in melted butter.

  2. Add spices and saute for 2 minutes.

  3. (Rinse and drain Kidney beans.) Stir in kidney beans and rice and cook for 3 minutes.

  4. Add the corn kernels, salsa and water.

  5. Bring to a boil and simmer over low heat for about 20 to 25 minutes.

  6. Serve in bowls and garnish with Canadian Cheddar!
