This is Awesome to look at ,, I really would like a stronger seasoning in it ( I am going to experiment with this one ) its all most at an AAA any tips to make this one better let me know My husband and I like this truly one could cut the portion in ½ I mostly freezer the other half so 2-3 weeks down the road Wa La I have a meal waiting for me just make sure ya date it serving size is 1 cup

Recipe Ingredients for Mexican rice ?.. beans / tomatoes / Chicken

31 ounce Red Kidney Beans
15 ounce Black Beans
28 ounce Diced Tomatoes
1 pound Chicken
2 large green pepper
1 medium Onion
6 cups Cooked Rice

Recipe Directions for Mexican rice ?.. beans / tomatoes / Chicken

  1. I use 3 times ¾ dry rice to get 6 cups of cooked rice

  2. I cook my rice in a rice cooker so its already done when I am?

  3. cooking the chicken , I chop up chicken is small bite sizes

  4. Sauté my chicken in garlic diced for jar 2 table spoons ( I love garlic )

  5. Little oil 2 tablespoons or chicken broth ½ cup

  6. Black pepper to taste ( I like a lot ) I steer a lot and I do keep an lid on ½ of the time

  7. Once the chicken is done I put in roasting pan

  8. I have a large roasting pan on stove waiting for me to add all other ingredients

  9. I cook onions & green pepper sauté in 2 table spoons of oil or chicken broth when tender put in roasting pan

  10. I drain all beans & diced tomatoes and put into roasting pan

  11. With rice and seasoning

  12. Mix well this is a huge portion 20 cups or 40 ½ cups so I end up freezing half
