Slow cooker, one pot vegan version of a recipe on p.110 of Fix-It and Forget it Lightly by Phyllis Pellman Good.

Recipe Ingredients for Mexican Rice and Beans

15 oz Diced Tomatoes
1/2 cup Black Beans
6 serving Converted Enriched Parboiled Rice
2 tbsp chopped Onions
1 serving Chopped Green Chiles
1 clove Garlic
1 cup Vegetable Broth
1 tsp Cumin
1 tsp Chili Powder
2 oz Coriander

Recipe Directions for Mexican Rice and Beans

Put all ingredients in slow cooker and cook 6-7 hours. Serve with fresh greens, chips and/or tortillas
