Starts out like Pico de Gallo, but with added flavors. Great for wraps, salads, rice, or on its own. Serving size is listed as 0.25 cups (only 43 calories per!). Makes 36 0.25 cups servings.

Recipe Ingredients for Mexican Relish

1 cup diced orange bell pepper
1 cup diced avocado
2 cups chopped onion
2 cups chopped tomato
2 tbsp water
0.06 tsp lime juice
1/2 cup chopped fresh cilantro
1 cup frozen corn, thawed
1 1/2 cup canned black beans, low sodium
1/8 cup minced habanero pepper
1 tsp ground cumin

Recipe Directions for Mexican Relish

  1. 1) Chop avocado

  2. 2) Mix lime juice and water together and coat chopped avocado. Set aside to let the avocado absorb the ascorbic acid in the lime.

  3. 3) Drain 1 can of reduced sodium black beans and soak in water. Set aside.

  4. 4) Chop/dice all the other veggies & cilantro and combine in a large bowl (~3-4 qt)

  5. 5) Drain black beans and add to the mix.

  6. 6) Add avocado (with the lime juice & water mixture that it was soaking in)

  7. 7)Add cumin (more or less to taste)

  8. 8) Let the flavors stew for a bit and enjoy!

  9. P.S. You can always add more habanero to taste! :)
