Recipe Ingredients for Mexican refried beans

1 tablespoon vegetable oil
1 large onion, chopped finely
3 garlic cloves, chopped finely
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
400 grams canned tomatoes, chopped with their juice
11 oz dried pinto beans , soaked and cooked
1 salt and pepper, season to taste

Recipe Directions for Mexican refried beans

  1. soak and pressure cook the beans.

  2. Mash 3/4 beans.

  3. In a large frying pan, heat the oil and add the onion and fry for 5 mins until browned. Stir in the garlic, cumin and chilli/cayenne and cook for 1 minute.

  4. Add the tomatoes and cook over a medium heat until liquid has avaporated. Add the mashed beans to the mixture, lower the heat and cook stirring until mixture changes colour slightly and is smooth and creamy.

  5. Add the whole beans and stir well season with salt and pepper. Serve hot with tortilla chips chilli and rice.
