Recipe Ingredients for Mexican Quinoa salad

1 1/2 cups red bell pepper
1 1/2 cups onion
2 cups cooked quinoa
2 cups sweet corn
4 cloves garlic
2 tablespoons chili powder
1 teaspoon ground cumin seed
1 teaspoon salt
2 cups water

Recipe Directions for Mexican Quinoa salad

  1. Saute peppers, onion in small amount of oil.

  2. Add herbs and spices, saute for another minute or two.

  3. Add all other ingredients, bring to a simmer, cover loosely and simmer for about 20 minutes

  4. Remove from heat and let stand covered for another 10 minutes.
