Easy, delicious and flavorful quinoa salad.

Recipe Ingredients for Mexican Quinoa Salad

1 cup Quinoa
2 cup, shredded Cabbage
15 oz Black Beans
8 oz Hot Salsa
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
8 oz Cilantro
4 medium (4-1/8" long) Onions, Spring Or Scallions
1 tsp Garlic Powder
2 tsp Cumin
1 tsp Paprika
1/2 tsp Sea Salt
1 tsp Peppercorns

Recipe Directions for Mexican Quinoa Salad

Cook quinoa in 2 c. boiling water for 20 min. Chop veggies and combine all ingredients, mix well. Serve with avocado if desired.
