Another variation on how to get quinoa to get up and dance.

Recipe Ingredients for Mexican Quinoa

1 c. quinoa, dry
1/2 cucumber, large, diced
1/3 c. red onion, diced
1 tbsp. cumin
1 tsp. chili powder
1 tsp. hot sauce (Tobasco)
3 tbsp. cilantro
1 tsp. olive oil
2 tbsp. sesame seed oil

Recipe Directions for Mexican Quinoa

  1. Put 1 c. quinoa and 2 c. water in a pan. Bring to boil, then simmer until the water is completely absorbed (about 15-20 minutes).

  2. Add olive oil and sesame seed oil, and remaining ingredients.

  3. Add salt to taste.

  4. NOTE: this is fabulous served with 2-3 tbsp. of fresh guacamole
