Recipe Ingredients for Mexican Quinoa Dinner

2 cup Vegetable Broth
1 cup dry Quinoa
1 tbsp Olive Oil
1 large Onions
1 tbsp Minced Garlic
2 medium raw Bell Pepper Red
30 oz Black Beans
12 oz Frozen Cut Corn
4 oz Cilantro
1 tsp Cumin
0.5 tsp Sea Salt
1 dash Pepper, Black

Recipe Directions for Mexican Quinoa Dinner

In oil, brown onions, garlic & red peppers. Cook 1 c quinoa in 2 c of vegetable broth til done (15-20 mins), along with cumin, cayenne,, salt & pepper. Add frozen corn to the onion mixture - heat, then add 2 cans of black beans (rinsed) and 1/2 c cilantro, and add quinoa. Mix and serve - we top with guacamole.
