Hot and spicy mexican stew. This recipe calls for hominy, dried but try to find posole in the cellaphane bags in the mexican section. Also, the green chilis are fresh, roasted Hatch New Mexico green chilis. Use more to taste. You can also throw in some chopped jalapenos.

Recipe Ingredients for Mexican Posole Stew

1/2 cup olive oil
4 7/20 lbs. pork ribs, shoulder
2 1/2 cup onion, chopped
1/4 cup garlic, chopped
20 cups water
2 tablespoon Oregano, Mexican
1/2 tablespoon Cumin seed, ground
24 ounces hominy, dried
1 1/2 cup green chilis, chopped
16 ounce Rotel Tomatoes, Canned
1 1/2 teaspoon salt
2 teaspoons black pepper

Recipe Directions for Mexican Posole Stew

  1. Heat olive oil in a large kettle or dutch oven

  2. Brown pork ribs for about 5 minutes per side

  3. Remove pork ribs to a platter

  4. Put onions & garlic and sweat onions 5 minutes

  5. Add water (if your pot won't hold it add it as you can)

  6. Add spices and stir

  7. Put pork ribs back in pot

  8. Add Posole (hominy)

  9. Add Rotel Tomatoes

  10. Simmer 4 to 8 hours. Pork should fall off bone and posole should be puffed and tender.
