Recipe Ingredients for Mexican Pork & Black Bean Stew

3 1/2 cups cooked black beans
16 oz. stewed tomatoes, with juice
1 lb. pork loin, lean
1 clove garlic, minced
1 onion, chopped
2 cups water
1/2 tsp. salt

Recipe Directions for Mexican Pork & Black Bean Stew

  1. Cut the pork into 1" cubes, toss with 1 tsp. coriander, 1 tsp. chili powder, and salt. Lightly brown in a large skillet over medium-high heat with garlic and onions. Place pork into a medium-sized slow cooker.

  2. Drain and rinse 2 15-oz. cans of black beans. Add the beans, the can of stewed tomatoes with their juices, and 2 cups of water to the slow cooker. Stir to combine.

  3. Cook on LOW for 8 to 9 hours. Serve with rice.
