Recipe Ingredients for Mexican Polenta Casserole

1 medium onion chopped
4 cups veggie crumbles
2 tsp cumin
1 tsp chili powder
14 1/2 oz can tomato sauce
16 oz polenta
14 1/2 oz fat free refried beans

Recipe Directions for Mexican Polenta Casserole

  1. Preheat oven to 400.

  2. Brown crumbles and onions. Add spices and tomato sauce and simmer.

  3. Spread polenta in the bottom of a 9 x 13 pan. Cover with refried beans. Spread crumble mixture on top.

  4. Bake for 30-45 minutes.
