Recipe Ingredients for Mexican Pizza

12 brown rice cakes, lightly salted
16 oz. fat-free refried beans
1 c. salsa
2 plum tomatoes, medium/diced
4 oz. green chilies, drained/chopped
1/2 cup green peppers, chopped
1/4 c. onions, chopped
1 cup cheddar cheese, shredded/low fat

Recipe Directions for Mexican Pizza

  1. Heat beans and spread over rice cake.

  2. Layer with salsa, tomatoes, chilies, green pepper, onion and cheese.

  3. Garnish with low-fat sour cream if desired.
