A low carb pizza that's good even if you're not low-carbin'.

Recipe Ingredients for Mexican Pizza, low-carb (15 net carbs)

1 10" low carb wheat tortilla
1 tbsp canola oil
1/2 cup refried pinto beans
3 oz shredded mexican blend cheese
1/3 cup chopped tomato
1 tbsp chopped onion
1 1/2 tbsp sour cream
1 tsp lemon juice
1 tsp chopped jalapeno
1/4 tsp salt
1/4 tsp pepper
3/4 cup chopped lettuce

Recipe Directions for Mexican Pizza, low-carb (15 net carbs)

  1. Heat oil in large skillet over medium heat and swirl to coat.

  2. Spread pinto beans on tortilla and place in skillet. Sprinkle half the cheese over the beans. Then sprinkle half the tomatoes and onions over the cheese and top with the other half of the cheese. Sprinkle with salt and pepper and let cook until cheese is completely melted. Turn up heat to high and let cook until tortilla is crispy.

  3. In a small bowl stir together the sour cream, jalapenos, and lemon juice.

  4. Remove pizza from skillet and slice the pizza. Plate it and top with sour cream mixture, lettuce, and the rest of the tomatoes and onions. Top off with some salsa if you wish.
