Recipe Ingredients for Mexican Pasta Salad (adapted from Moosewood Low-Fat Favorites)

1/2 lbs penne
1 cup corn
3 scallions, minced
1 cup bell pepper, chopped
1 1/2 cup kidney beans, rinsed and drained
1 cup tomatoes, chopped
2 t olive oil
2 T lime juice
2 t ground cumin
2 T cilantro, chopped
1/2 t black pepper

Recipe Directions for Mexican Pasta Salad (adapted from Moosewood Low-Fat Favorites)

  1. Cook the pasta for about 10 minutes until al dente. Add the corn during the final 2 minutes of cooking. Drain the pasta and the corn, rinse with cold water and set aside.

  2. Combine the scallions, bell peppers, beans, tomatoes, olive oil, lime juice, cumin, cilantro and black pepper.

  3. Mix in the pasta and corn and add salt to taste.

  4. If desired top each serving with a tablespoon of Cheddar cheese and a spoonful of salsa.
