Use left over taco meat in this Omelet

Recipe Ingredients for Mexican Omelet

2 large eggs
1 tsp butter
1 tsp safflower oil
1 tsp half and half
3 oz ground beef
2 tbs cheddar cheese, grated
1/4 tsp kosher salt
1/4 tsp black pepper
2 tbsp onion, diced
2 tbsp mushroom, diced
1/4 cup eggbeaters

Recipe Directions for Mexican Omelet

  1. Beat the eggs with the half and half and salt and pepper.

  2. Heat the left-over taco meat so that it's not cold.

  3. In a medium heat non-stick omelet pan add the oil and butter when the pan is medium hot, add the egg mixture, and stir lightly until it starts to form an omelet. Add the cheese and taco mixture, turn out on to a plate after 30 seconds.
