Recipe Ingredients for Mexican Omelet

1 tsp margarine
2 large eggs
1/2 cup sweet red pepper, finely diced
1/4 cup green onion, finely diced
4 tbsp salsa
1 garlic powder to taste

Recipe Directions for Mexican Omelet

  1. Mix eggs, sweet pepper, and onion in a bowl. Pour into frying pan and cook over medium heat.

  2. Pour salsa over 1 half of the egg and sprinkle garlic over the other half.

  3. Fold the garlic side over the salsa side and continue to cook until set.
