1/4 cup onions
1/4 cup tomatoes
1/4 cup green chile
1/4 mozzarella cheese, low fat

Recipe Directions for Mexican Omelet

Chop onions and sweat for a minute to soften. Whisk eggs and add vegetables and cheese. Pour into an omelet pan and cook over medium heat until eggs are set and cheese is melted.
