Mexican Mini Quiche Recipe

Recipe Ingredients for Mexican Mini Quiche

1/2 T oil, olive
2 cloves garlic
1/2 red onion
3 tomatoes
1 cup zuchinni
1 pepper, jalepeno
1 bell peppers
16 oz beans, kidney
1 t cumin
1 t thyme
1 T chili powder
1/2 t salt
4 slices bread, sourdough
1 1/2 T. oil, olive
2 eggs
4 Egg, White
4 oz greek yogurt, nonfat (oz)

Recipe Directions for Mexican Mini Quiche

  1. Preheat Oven to 350

  2. Chop all vegetables to a fine dice, mincing garlic, onion and jalepeno.

  3. Add 1/2 T of olive oil to skillet and sautee garlic and onion until soft.

  4. Add remaining vegetables, continuing to saute until soft. Stir in beans, cumin, thyme, chili powder and salt

  5. Turn off heat and set aside

  6. Spray muffin tin with nonstick spray.

  7. Toast bread slides, then put in food processor and mix until fine bread crumbs.

  8. Mix with 1 1/2 T of olive oil.

  9. Put 1 T of mixture in each muffin tin, pressing firmly to the bottom.

  10. In separate bowl mix eggs and yogurt.

  11. Once vegetables have cooled, mix in eggs

  12. Spoon egg and vegetables into muffin tins.

  13. Cook for 20-25 minutes at 350 degrees until firm.

  14. I store these in the fridge and put them in the toaster oven in the morning for 5 minutes for a quick breakfast. They also make a great afternoon snack for the kids.
