cheese quesadillas served with cilantro lime corn, refried beans, and sour cream, salsa, and milk

Recipe Ingredients for Mexican Meltys

200 whole wheat tortillas
25 c low fat cheddar cheese
25 c mozzarella cheese
200 tsp canola oil
100 T light sour cream
100 T salsa
75 ears sweet corn
75 T olive oil
50 cloves garlic, minced
200 tsp lime juice
100 T fresh cilantro
300 oz refried beans
100 pints skim milk

Recipe Directions for Mexican Meltys

  1. preheat griddle, spray with nonstick spray, place tortilla on griddle with1/4 cup mozzarella and cheddar. fold in half and cook until cheese melts.

  2. mean time, oil corn and rub with garlic. grill corn and cut off the cobb, mix with cilantro and lime juice. season if necessary.

  3. cook refried beans on stove top until heated through, cut quesadilla into fourths, serve with corn, sour cream, and salsa
