Makes 8 servings



my version of mexican meatloaf - with veggies. Can be made with 1 lb of ground turkey, 1.25 lb beef, and egg beaters to reduce cals and fat.

Recipe Ingredients for Mexican meatloaf

2 1/4 pounds ground beef
1 cup salsa
1 1/2 cups bread crumbs
2 large eggs, beaten
1/2 medium green pepper, chopped
1/2 medium red pepper, chopped
1/2 teaspoon garlic powder
1/2 teaspoon crushed red pepper
1/2 teaspoon chili powder
1/2 teaspoon cumin

Recipe Directions for Mexican meatloaf

  1. Mix all ingredients

  2. Press into loaf pan sprayed with non-stick spray

  3. Bake at 350 F for 1 hour. Drain fat off top.

  4. Serve with salsa and fat free sour cream.(Fage 0% yogurt is also a good sour cream alternative.)
