Mexican Meatloaf Recipe

Makes 8 servings



Add olive oil to a hot pan. Sautée onion, green pepper, and jalapeno until soft. Add garlic and honey/agave nectar. Sautée vegetable until they start to caramelize. Let cool. In medium size mixing bowl, add all ingredients. Mix well with hands for best results. Place in a bread pan and cover with plastic wrap. Let the meatloaf marinade in the fridge for 3 hours. Let meatloaf sit out 30 minutes before baking. Preheat an over to 350 degrees at that time. Bake in the oven for an hour. Great served with Baby Ray's BBQ sauce instead of ketchup.

Recipe Ingredients for Mexican Meatloaf

1 tsp olive oil
1/2 medium onion
1/2 small green bell pepper
1 Jalapeno pepper
4 cloves garlic
1 tsp honey or agave nectar
1 lb lean ground beef
1/3 c bread crumbs
1/3 c grated Parmesan cheese
1/4 c wheat germ
1 large egg
1 T parsley
1/2 T oregano
1/2 T paprika
1 T chili powder
1 T ground black pepper
1 T Worcestershire sauce
1/2 T soy sauce
1 T dijon mustard
1 tsp Hot Sauce
1 dash ground cloves
