Tasty meatloaf already portioned in servings. Can have one or two or whatever your caloric intake for the day allows. Can substitute regular diced tomatoes if you do not like spicy hot Rotel tomatoes.

Recipe Ingredients for Mexican Meatloaf Muffins

1 cup bread crumbs
10 oz Rotel Tomatoes
1/2 cup chopped red pepper
1/2 cup chopped onion
1 pound ground sirloin (90% beef)
1 tbsp Worcestshire
1 Salt
1 Pepper

Recipe Directions for Mexican Meatloaf Muffins

  1. Combine bread crumbs (or croutons) with Rotel tomatoes and let soak 10 minutes (until bread crumbs are soft). Add rest of ingredients and mix thoroughly. Spray 12 cup muffin pan with Pam. Divide mixture into equal portions and pack into muffin cups.

  2. Bake at 350 degrees for 30-40 minutes.

  3. Let rest for 3-4 minutes, then Remove from cups and place on paper towel to absorb extra grease.

  4. Serve and enjoy.
