Recipe Ingredients for Mexican Meat Muffins

1 1/2 pounds extra lean ground beef
1 egg
3/4 cup dry oats
1/2 cup salsa (chunky)
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt

Recipe Directions for Mexican Meat Muffins

  1. Preheat oven to 400.

  2. Combine all ingredients except garnishes (salsa & cheese), mixing well. Press mixture into muffin tins lines with aluminum foil muffin cups (for easier cleanup and less fat than greasing muffin tins).

  3. Bake for 20 minutes or until done.

  4. Top each met muffin with one Tablespoon of salsa and cheese, and bake 3-5 minutes longer until cheese is melted.
