Recipe Ingredients for Mexican Lettuce Wraps

15 ounces canned black beans, rinsed and drained
1 medium tomato, seeded and finely chopped
4 ounces green chilies, chopped (canned)
1/2 cup salsa
1/4 cup onion, finely chopped
1/4 cup sweet red pepper, finely chopped
1 tbsp. lime juice
1/2 tsp. ground cumin
1/2 tsp. seasoned salt
1/4 tsp. garlic powder
1 medium ripe avocado, peeled and finely chopped
1/2 cup reduced-fat sour cream
12 Boston lettuce leaves

Recipe Directions for Mexican Lettuce Wraps

  1. In a large bowl, combine the first 10 ingredients.

  2. Refrigerate until serving.

  3. Just before serving, stir in avocado.

  4. Place 1/2 cup bean mixture on each lettuce leaf; top each with 2 tsp. sour cream.

  5. Fold lettuce over filling.
