Sort of like tortilla soup without the tortilla...makes about 32 one cup servings!

Recipe Ingredients for Mexican Lentil Bean Soup

2 onion, chopped
4 1/2 g olive oil (1 tsp)
4 carrots, diced
4 cloves garlic, minced
1 1/2 tablespoon dried oregano
1 1/2 tablespoon dried basil
3 tbsp cumin
2 tbsp chili powder
56 ounce tomatoes
1 can tomato paste
2 1/2 cups dry lentils
16 cups water
5 cups black beans
22 oz corn
16 bouillon cubes

Recipe Directions for Mexican Lentil Bean Soup

  1. Saute onions in oil for 3 min; add diced carrots and saute for 4 more min; add garlic and saute for another 2 min.

  2. Add all ingredients except black beans and corn. Bring to a boil; simmer until lentils are tender (30-50 min).

  3. Add black beans and corn; heat through (10 min). Top with cilantro and other goodies if you have the calories - FF sour cream or yogurt, cheese, salsa...
