A spicy rendition of lasagna, mexican style!

Recipe Ingredients for mexican lasagna

9 Tortilla OLE Fajita 6'' Flour Tortillas
30 oz Tomatoes, Red, Ripe
8.64 oz Tomato Products
3 tbsp Chili Powder
2 cup, chopped Onions
5 serving Shredded Chicken
3 cup, shredded Cheddar Cheese
3 tbsp Olive Oil

Recipe Directions for mexican lasagna

  1. Saute onions, chopped, in olive oil for a few minutes.

  2. Add tomatoes and tomato sauce as well as chili powder. You can add cumin, too, if you like.

  3. Layer in 9x13 pan, a small amount of sauce, then four tortillas, then chicken, some cheese, then sauce. Continue to layer, ending with a generous portion of cheese.

  4. Bake @325 for about 50 minutes, covered for 40 and uncovered for 10.
