Recipe Ingredients for Mexican Lasagna

1.5 tsp Chili Powder
1 tsp Cumin
0.5 tsp Table Salt
1 serving Cayenne Pepper
32 oz Tomato Sauce
12 oz Cream, Sour, Cultured
8 medium (4-1/8" long) Onions, Spring Or Scallions
3 teaspoons McCormick's Taco Seasoning
4 cup, chopped or diced Chicken, Breast, Meat Only
1 can (12 oz) yields Corn, Sweet, Yellow
8 oz Cheddar Shredded Cheese
15 tbsp Olives, Ripe, Canned (Small-extra Large)
6 serving Mission Foods, Mission Flour Tortillas, Soft Taco, 8 Inch

Recipe Directions for Mexican Lasagna

  1. Mix tomato sauce, chili powder, cumin, salt, pepper in one bowl, and sour cream, scallions, and taco seasoning in another.

  2. Layer 1/2 cup tomato mix in bottom of 9x13 pan.

  3. Put a layer of tortillas over bottom of pan.

  4. Top with sour cream mix, 1/2 the chicken, 1/2 the corn, 1 cup tomato mix, 1/3 of the cheese, repeat. End with tortillas and sauce - top with cheese. Garnish with black olives and chopped scallions.

  5. Bake at 350 for about 35 minutes.
