Easy, quick & delicious mexican style lasagna. The kids will love it!

Recipe Ingredients for Mexican Lasagna

1 1/2 pounds ground turkey
1 onion
14 ounces Mexican Stewed Tomatoes
3 1/2 ounces green chilies
1 cup frozen corn
1 cup Taco Sauce
3 tbsp minced garlic
1 tsp garlic powder
2 tsp chili powder
2 tsp ground cumin
14 ounces black olives
252 grams flour tortilla
8 ounces shredded extra sharp cheddar
4 ounces shredded cheddar
15 ounces black beans

Recipe Directions for Mexican Lasagna

  1. Saute onions and garlic until translucent.

  2. Add that ground turkey and cook until done.

  3. Add spices mix through and then add corn, olives, tomatoes, taco sauce & beans. Heat through.

  4. Take half of the meat mixture and spread it in a casserole dish. Add a thin layer of the cheese and then a layer of tortillas. Repeat and then top with remaining cheese.

  5. Bake at 425 F until it is heated through and the cheese is melted on the top. (around 15-20 minutes).

  6. Serve with salsa & light sour cream. :)
