From Rachel Ray Not diet food -- but yummy. Budget calories for it! Or omit meat. Or eat smaller portion. Can use ground chicken, but will need a little olive oil to brown it in.

Recipe Ingredients for Mexican Lasagna

1/2 pound ground beef, 85% lean
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
15 ounce black beans, drained
14 ounce tomatoes
1 cup frozen corn kernels
4 whole wheat tortillas
6 oz. cheese, shredded

Recipe Directions for Mexican Lasagna

  1. Preheat oven 425 degrees

  2. Preheat large skillet over medium high heat. Add 2 TBSP olive oil. Add beef and season with chili powder, cumin, and red onion. Brown the meat, 5 min. Add taco sauce or stewed tomatoes. Add black beans and corn. Heat mixture through, 2 to 3 minutes.

  3. Spray shallow baking dish with PAM. Cut tortillas in half or quarters to make them easy to layer with. Build lasagna layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla cheese again. Bake 12 to 15 min until cheese brown and bubbly. Top with scallions.
