Recipe Ingredients for Mexican Lasagna

1 cup cooked instant brown rice
1/2 cup diced chilies
1/2 cup fat free refried beans
8 ounces cooked chicken breast
1/4 chopped Vidalia onion
1 cup salsa
1 cup shredded cheese
1 cup shredded lettuce
1 tomato
8 T. sour cream

Recipe Directions for Mexican Lasagna

  1. Layer first 7 ingredients in a 9X13 glass pan.

  2. Bake at 350 degrees until cheese is melted.

  3. Remove from oven and top with lettuce, tomato and one tablespoon sour cream.

  4. Add to tortilla or eat it plain.
