Mexican Lasagna Recipe

Adapted from corn tortilla packaging

Recipe Ingredients for Mexican Lasagna

15 oz pinto beans
15 oz tomato sauce
3/4 c water
1 tomato
2 3/4 ounces cheddar cheese
1/2 ounces swiss cheese
3 tbsp fajita seasoning
5 corn tortillas
2 tbsp jalapeno
1/4 cup red bell pepper
1/4 cup green onion
1 tbsp extra virgin olive oil

Recipe Directions for Mexican Lasagna

  1. Add water and seasoning to skillet. Mix well.

  2. Add chopped tofu to skillet and cook for 5-10 minutes

  3. Drizzle olive oil on bottom of glass baking dish

  4. Line baking dish with 3 tortillas

  5. Layer seasoning and tofu, beans, onions, 1/4 of the cheese and peppers in pan

  6. Top with remaining tortillas and cheese

  7. Bake at 350 degrees for 35 minutes. Let stand 5 minutes before serving.
