Beef, salsa, cheese layered between tortillas

Recipe Ingredients for Mexican Lasagna

1 lb ground beef
92 g sliced green pepper
1 onion, sliced
1 1/2 cups reduced fat cheddar
200 g flour tortillas
2 cups salsa
1 cup cottage cheese

Recipe Directions for Mexican Lasagna

  1. Preheat oven to 350 F

  2. Brown beef, peppers, onions in pan on medium-high heat. Drain.

  3. Place 1 tortilla in square pan, and layer on top half of meat/pepper/onion mix, 1 cup salsa, half of cheese. Place second tortilla on top. Layer cottage cheese and the remaining ingredients.

  4. Place in oven for 10-15 minutes until cheese has melted.
