Recipe Ingredients for Mexican Lasagna

18 6" corn tortillas
1 3/10 lb ground chicken
14 1/2 oz black beans
14 1/2 oz corn
1 medium onion
1 tbs canola oil
3 cups shredded mexican blend cheese
12 oz enchilada sauce
1 tbs chili powder
2 tsp cumin
1 tsp salt
1/2 tsp pepper

Recipe Directions for Mexican Lasagna

  1. Preheat 1 tbs oil in heavy skillet over medium high heat

  2. Add chicken-crumble and brown

  3. Add chili powder, cumin, salt and pepper and 1/3 cup of water to meat

  4. Let cook until most of water is evaporated

  5. Drain black beans and corn, add to meat

  6. Spray a lasagna pan with cooking spray

  7. Pour about 2 tbs of enchilada sauce into bottom of dish-spread out evenly

  8. Layer tortillas, sauce, meat then cheese 2 times

  9. Last layer tortillas, sauce and cheese

  10. Bake in preheated oven at 400 degrees until lightly browned.
