Mexican Lasagna Recipe

Spicier, low fat mexican slant on lasagna. It's tasty and simple to make. Rates well with visitors when I do this dish.

Recipe Ingredients for Mexican lasagna

240 g tortillas
1 kg minced beef, lowest fat
1 onion, finely chopped
35 g taco seasoning mix (1 pack)
500 g spinach, frozen
600 g salsa
1/2 cup water
1 cup grated cheese
1 tablespoon oil

Recipe Directions for Mexican lasagna

  1. In a large casserole pan cook the chopped onion in oil until soft. Add mince and cook until well browned. Drain excess fat from mince, then add spice mix and cook one minute on low heat. Set aside 1/3 of the salsa, diluting it with the water. This diluted salsa makes the final layer of the lasagna. Add the remaining 2/3 of the salsa to the mince mixture and cook to reduce slightly.

  2. Layer into lasagna pan as follows:

  3. Bottom layer is mince mix, then top with trimmed tortilla to cover.

  4. Next layer is mince, then one full pack thawed spinach, then a tortilla.

  5. Repeat, topping the final tortilla with the diluted salsa, then the grated cheese.

  6. Cook half hour in oven at 190 degrees Celsius.

  7. Let stand for five minutes to set before serving with green salad or garlicky green beans.

  9. Half this recipe will fill a loaf pan for a smaller lasagne
