Mexican Lasagna Recipe

Layered corn torillas baked with black beans, beef, vegetables and cheese.

Recipe Ingredients for Mexican lasagna

1 lb. ground beef
1 cup Refried Black Beans
120 g Sharp Cheddar Cheese
1/2 cup sweet onion
1/4 cup bell pepper
10 corn tortillas
8 oz. enchilada sauce
1/2 cup diced plantain

Recipe Directions for Mexican lasagna

Fry beef and drain off fat. Saute onion, pepper and plantain with beef. Add enchilada sauce. Spread tortillas with beans, layer in 8 x 8 pan with beef mixture. Sprinkle cheese on each layer. Bake at 350 for 30 minutes.
