Recipe Ingredients for Mexican Ground Beef and Noodles

4 oz pasta
12 oz ground beef
2 cloves garlic
10 oz black beans
10 oz diced tomatos
3/4 cup salsa
1 teaspoon oregano
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/3 cup fat free sour cream
3 tablespoons green onion, chopped

Recipe Directions for Mexican Ground Beef and Noodles

  1. preheat oven to 350

  2. in a large saucepan, cook pasta according to pagackage, drain and return to hot saucepan, set aside

  3. meanwhile, in a large skillet, cook meat and garlic until meat is browned, stirring to break up meat as it cooks. drain off fat.

  4. stir the cooke dmeat into pasta in saucepan. stir in drained and rinsed beans, undrained tomatoes, salsa, oregano, cumin, and chili powder. Transfer mixture to a 2 quart casserole or baking dish.

  5. Bake coverd, about 30 min. uncover and sprinkle with cheese(optional)

  6. in a small bowl stir together sour cream, 2 tablesoons of the green oninions, the calantro. to serve top each serving with a spoonful of the sour cream mixture.
