A little salsa goes a long way in these quick, no-fuss sandwiches. Perked up with sweet peppers, they're flavorful, fun and ideal on busy weeknights.

Recipe Ingredients for Mexican Grilled Cheese Sandwiches

1 sweet yellow pepper
1 green pepper
2 tsp. olive oil
8 slices rye bread
2 tbsp. Hellmanns Light Mayonnaise
1 cup fresh salsa
3/4 cup Reduced Fat Mexican Blend Shredded Cheese
2 tbsp. butter

Recipe Directions for Mexican Grilled Cheese Sandwiches

  1. In a small skillet, saute peppers in oil until tender (both should be chopped).

  2. Spread fout bread slices with Hellmans.

  3. Layer with peppers, salsa and cheese.

  4. Top with remaining bread.

  5. Butter outsides of sandwiches.

  6. In a small skillet over medium heat, toast sandwiches for 2-4 minutes on each side or until cheese has melted.
