Baked custard dessert with caramel coating. "Flan" (latin for "flat cake") originated as an unsweetened custard dish consisting of eggs and creme as far back as the Ancient Roman Empire. After the fall of the Roman society, it survived the violent Medeivel times and surfaced in Spain as a sweet custard made of caramelized sugar. It was later adopted by Mexico where it is most associated today as a popular dessert dish shared by the rich and poor, alike.

Recipe Ingredients for Mexican Flan

1/3 c. sugar
3 eggs
1 1/2 c. evaporated milk
1/3 c. sugar

Recipe Directions for Mexican Flan

  1. To caramelize sugar, in a heavy skillet cook 1/3 c sugar over medium-high heat until sugar begins to melt, shaking the skillet occasionally to heat sugar evenly. Do not stir. Once the sugar starts to melt, reduce heat to low and cook about 5 min. more or until all the sugar is melted and golden, stirring as needed with a wooden spoon. Immediately divide the caramelized sugar among six 6-oz custard cups or pour into 8-in flan pan or an 8x1 1/2 in round baking pan. Working quickly, tilt cups or pan so sugar coats the bottom evenly. Let stand.

  2. Preheat oven to 325 degrees. In a medium bowl, combine eggs, evaporated milk, and 1/3 c. sugar. Place cups or pan in a13x9x2-in baking pan on an oven rack. Pour egg mixture into cups or pan. Pour the hottest tap water available into the 13x9x2-in pan around the cups or flan pan to a depth of about 1/2-in.

  3. Bake 35-40 mins for custard cups (30-35 mins for pan) or until knife inserted near the center comes out clean. Immediately remove cups or pan from hot water. Cool on a wire rack. Cover and chill for 4 - 24 hours.

  4. To unmold flan, loosen edges with a knife, slipping the knife point down the sides to let air in. Invert a dessert plate over each custard cup or serving platter over pan; turn dishes over together to release custard. Remove cup or pan. Spoon any caramelized sugar that remains over the top of the flan. Makes 6 servings.
