Recipe Ingredients for Mexican Eggs

2 serving Egg, Whole
1 tbsp Lard
0.25 medium (2-1/2" dia) Onions
0.25 pepper Peppers, Jalapeno
0.5 Medium Tomatoes
1 serving, raw Cilantro
1/2 cup diced Potatoes, Red, Flesh And Skin
1/4 cup Colby and Monterey Jack Shredded

Recipe Directions for Mexican Eggs

Fry potatoes in bacon grease. Saute onion and jalapeņo. Add eggs and scramble. Add tomato, cheese. When cheese has melted add cilantro. Salt, pepper, and cumin to taste.
