Eggs made out of leftovers from taco night! Turkey meat was seasoned with McCormick burrito seasoning, but that wasn't being recognized by the recipe analyzer. Avocado, onion, tomato, garlic, & cilantro actually means guacamole sauce, also left over. Easy and tasty.

Recipe Ingredients for Mexican Eggs

4 eggs
1/2 oz cheese
1 jalapeno pepper
2 tablespoons turkey
2 tablespoons refried beans
1/6 avocado
1/8 onion
1/8 tomato
1 clove garlic
1/8 cup cilantro
1 tablespoon cream
1 tablespoon butter
1 teaspoon salt

Recipe Directions for Mexican Eggs

  1. Whisk everything together in a bowl except butter, beans & guacomole.

  2. Melt butter in a medium skillet over low heat.

  3. Add egg mixture to skillet when butter is melted.

  4. Disturb egg mixture in skillet until it is cooked.

  5. Heat up beans separately; I don't care how.

  6. Serve eggs with beans & guacamole. Salt to taste.
