Mexican Cornbread Recipe

Recipe Ingredients for Mexican Cornbread

1 cup all purpose flour
1 cup cornmeal
1 tbsp baking powder
1/4 tsp salt
1 cup low fat buttermilk
1/2 cup egg beaters
1/4 cup splenda
1/4 cup canola oil
1 tsp jalapeno, diced
12 ounces Mexicorn

Recipe Directions for Mexican Cornbread

Pour oil into 8" cast iron skillet, put skillet in oven while preheating to 425. Sift dry ingrediants, add wet ingrediants and mexicorn and peppers. When oven is heated, pour oil into mixture. Stir briefly then pour into skillet. Bake for 15-20 minutes.
