Recipe Ingredients for Mexican Cornbread (lite)

4 egg whites
2 tablespoons canola oil
65 g canned green chiles
9 ounces creamed corn
1/2 cup nonfat yogurt
2 tablespoons nonfat yogurt
1 cup yellow cornmeal
1/2 teaspoon salt
2 teaspoons baking powder
105 g shredded sharp cheddar cheese

Recipe Directions for Mexican Cornbread (lite)

Preheat oven to 350 degrees. Spray 9 inch square pan; set aside. In a bowl, beat eggs and oil until well blended. Add chiles, corn, yogurt, cornmeal, salt, baking powder and cheese; stir until thoroughly blended. Pour batter into prepared pan. Bake for 1 hour or until crust is lightly browned and a wooden pick inserted in center comes out clean. Makes 9 servings.
