A very easy chicken chowder to throw together on busy nights! I often use leftover chicken and it freezes well! This is the base chowder, I often add chopped peppers and onions as well or you could substitute beans or leave the chicken out completely!

Recipe Ingredients for Mexican Corn Chowder

1 can cream-style corn
8 oz kidney beans
8 oz diced tomatoes
1 chicken breast
1/2 cup chicken broth

Recipe Directions for Mexican Corn Chowder

  1. Cook chicken breast, chop or shred into small pieces

  2. Add chicken pieces and all other ingredients to a pot.

  3. Heat and serve!
