Recipe Ingredients for Mexican Chili Beans

1 lb dried red kidney beans
8 c water
1/2 lb bacon
2 c onion, chopped
4 cloves garlic, minced
2 t salt
1 t pepper
3 T chilli powder
1 t dried oregano
1/4 t cumin
3/4 c tomato paste
1 c crushed tomatoes

Recipe Directions for Mexican Chili Beans

  1. Soak beans in the water overnight or for several hours.

  2. Bring to a boil, simmer just until tender, about 40 minutes.

  3. Fry bacon in a dutch oven or stock pot. When crispy, add onion and garlic; cook until golden and aromatic.

  4. Add spices and tomatoes. Simmer 15 minutes.

  5. Drain beans, reserving liquid.

  6. Add beans to tomato mixture along with 2 c reserved liquid.

  7. Cover and simmer 1 hour.

  8. Serve over rice for complete protein option.
