So, so good. Made it up with what I needed to use up in the fridge. The sour cream and the yogurt are pretty interchangeable, you can use one or the other if you like.

Recipe Ingredients for Mexican Chicken Wraps

415 g chicken breast
120 g light sour cream
50 g fat free yogurt
1 tbsp chili powder
1 tsp ground cumin
105 g red pepper
224 g corn
240 g black beans
66 g light ranch
105 g cheddar cheese
113 g salsa

Recipe Directions for Mexican Chicken Wraps

  1. Brown chicken breast in non-stick frying pan with a quick spray of pam (I use olive oil)

  2. Once the chicken is no longer pink add the red pepper, corn and black beans.

  3. Cook (with the lid on) for a couple of minutes while you make the sauce. Mix the yogurt, sour cream, chili pepper and cumin in a bowl. Add to mixture in frying pan.

  4. Add salsa and ranch dressing.

  5. Add cheese.

  6. Cook until the red pepper is as tender as you like it.

  7. Wrap in a whole wheat wrap (you'll have to log this separately) and place on pan.

  8. Bake at 350F for about 20 minutes? I'm not sure of the time. Check at about ten minutes, and if the bottom has browned, flip it over and cook for another ten or so. If it's not browned yet, just put it back in and keep checking it. You want both sides to be brown and crispy.

  9. Serve with shredded lettuce on top and some more salsa/sour cream or ranch dressing if you like.
