Recipe Ingredients for Mexican Chicken Stew

4 tbsp. olive oil
1 medium onion, chopped
2 tbsp. garlic, chopped
2 jalapeno peppers
1 tbsp. oregano, dried
1 tsp. cumin
28 ounces tomatoes, chopped, canned
2 cups cooked chicken
3 cups chicken stock, reduced sodium
2 tbsp. lime juice
1 cup cooked white rice

Recipe Directions for Mexican Chicken Stew

  1. sautee onion and garlic in olive oil for 2 minutes

  2. add jalapeno and spices for 1 minute until fragrant

  3. add tomatoes and chicken

  4. add a couple dashes of Worchestershire sauce and stock and cook for 20 minutes

  5. squeeze juice of lime into stew

  6. garnish as desired
