Tomatoe based chicken rice soup. Makes approx 10 - 2 cup servings

Recipe Ingredients for Mexican Chicken Soup

2 breast, bone and skin removed Chicken, Breast, Meat Only
1 tbsp Extra Virgin Olive Oil
2 medium raw Onion Yellow
6 cup Chicken Broth
3 pepper Peppers, Jalapeno
1 tsp Coriander Seed
1 tsp Cumin
1 cup, diced Celery
28 oz Whole Tomatoes
1 1/2 cup dry ORIGINAL CONVERTED Rice
3 clove Garlic
1 tsp Sea Salt
1/4 cup cilantro

Recipe Directions for Mexican Chicken Soup

  1. Preheat oven 350F. Bake 2 chicken breasts at 350 F for 35-40 mins. Cool, remove skin, shred and put aside.

  2. Meanwhile. Saute chopped vegatables (except garlic) in olive oil. Add chicken, spices ,garlic. Saute for a minute. Add broth, tomatoes and rice. Cover pot and cook for 25 minutes or until rice is tender.
