Soup with chicken breast, zucchini, squash, carrots, and corn in a spicy mexican flavored broth. Great served with rice and queso fresco sprinkled on top!

Recipe Ingredients for Mexican Chicken Soup

594 g chicken breast, boneless/skinless, diced
779 g yellow squash, diced
688 g zucchini, diced
3 jalapeno peppers, sliced
15 ounce carrots
15 ounce corn
2 tomatoes, sliced
1/2 onion, sliced
1 tsp cumin
3 tbsp chili powder
1 tsp garlic powder
2 tsp oregano
3 tbsp salt
1/4 cup cilantro
2 cups water

Recipe Directions for Mexican Chicken Soup

  1. In a blender put spices, 1 cup water, tomato, onion, cilantro, and jalapeno. Puree inhgredients in blender.

  2. Place diced chicken in pot; add puree mix, 1 cup of water, diced and canned vegetables.

  3. Simmer on stove med-high for approximately 30-40 minutes until chicken and vegetabls are cooked through.
