Toasted tortilla strips are a perfect garnish. Spray both sides of a 10" flour tortilla w/nonstick spray, cut into small, thin strips (3x1.5") and scatter in a single layer on a baking sheet. Bake at 400F until golden 6-7 mins.

Recipe Ingredients for Mexican Chicken Salad

1 T lime juice
4 t olive oil
2 garlic cloves
3/4 t chili powder
3/4 lb chicken breast
1 tomato
1 avocado
2 scallions
2 T cilantro
2 c shredded romaine lettuce

Recipe Directions for Mexican Chicken Salad

  1. To make the dressing, put lime juice in a small bowl. Drizzle in the oil, whisking constantly. Press in the garlic with a garlic press and add chili powder; whisk thoroughly.

  2. In a large bowl combine chicken, tomato, avocado, scallions, and cilantro. Pour dressing over and toss to coat. Refrigerate, covered, until the flavors blend - at least 2 hours.

  3. Divide the lettuce among 4 plates and mound chicken salad on top.
